Dream Muffin Mix Egg Free Choco

Recipe 1:

1000g Dream Muffin Mix Egg Free Vanilla
400g Water
250g Fresh oil

Recipe 2:

1000g Dream Muffin Mix Egg Free Choco
400g Water
250g Fresh oil

Recipe 2:

  • Mix all ingredients in a mixing bowl using paddle attachment
  • Slow speed for 1 minute and 4 to 5 minutes on medium speed

Method 1+2:

  • Mix Biscamix Chocolate and Egg in a mixing bowl using a whisk attachment
  • Mix for 1 minute at slow speed
  • Mix for 5 minutes on high speed
  • Fold in the almond powder, chopped dark chocolate and melted butter at last
  • Scale 700g batter in 30 x 8 x 7cm trays
  • Bake at 180°C for 30-35 mins in a deck oven, or 160°C in a rotary oven

Application Process:

  • Take a cake tin of 18cm x 7cm in height, paper lined greased rectangular mold
  • Pipe vanilla batter first with piping bag with thick layer
  • On top, pipe the chocolate batter
  • Repeat the same process 3 to 4 times weighing total 400g
  • Make a marble effect by inverting a toothpick in batter with gentle smooth swirl
  • Bake it for 25 to 30 minutes at 170 to 180°C temperature
  • Once baked, cool it down completely
