Recipe: Muffin

1000g Dream Muffin Mix Egg Free Vanilla
300g Water
300g Oil
350g Paletta Fruitfill Blueberry

Rapido crumble

120g Flour
100g Soft Butter
80g Sugar
20g Rapido

Method

  • Mix Dream Muffin Vanilla Egg Free, water and oil together using a paddle attachment
  • Mix for 1 minute on slow speed and then for 4 minutes on medium speed
  • Add 150g of Fruitfill Blueberry to the mixture and mix roughly
  • Scale 50g batter in 6 X 3cm muffin moulds
  • Pipe 5g of Fruifill Blueberry in each muffin
  • For Rapido crumble, mix all ingredients together with hands
  • Top 5g of Rapido crumble on each muffin
  • Bake at 180°C for 25 minutes in an electric deck oven, or 160°C in a rotary oven
