Tea Time Cake

Recipe:

1000g Biscamix Sponge Egg Free Vanilla
1000g Milk
500g Butter
500g Brown Sugar
500g Dates
400g Raisins
200g Dried Currants
400g Candied Peel
40g Orange Zest
10g Cinnamon powder

Toffee Sauce:

300g Brown Sugar
400g Fresh Cream
25g Butter

Method:

  • In a large sauce pan combine milk, sugar, butter, dates, raisins, currants, mixed peel and orange zest. Bring it to boil. Remove from the heat and set aside
  • Mix the dry ingredients gently until combined
  • Pour 350g batter in the prepared pudding mould. Cover with double layer of grease wax paper and steam bake at 180°C for 30-40 minutes or done in an electric deck oven, or 160°C for 30-40 minutes in a rotary oven

Method for Toffee Sauce:

  • Melt brown sugar, add fresh cream bring it to boil and stir continuously. Remove from the heat and add butter
