Method:
Mix all ingredients together using a whisk attachment
Mix for 1min at slow speed
Mix for 5mins at high speed
Scale the 500g batter in a 38 X 35 X 2cm tray
Bake at 200°C for 8-10mins in an electric deck oven or 180°C in a rotary oven
Demould the sponge sheets and layer it with Presta Pineapple
Roll the sheets and keep in the refrigerator for 15-20mins
Remove from the refrigerator and slice it evenly
Portions:
4 log, that is 19 pcs for each log = 76 portions of swiss roll
