Recipe

1000g Biscamix Sponge Vanilla
1000g Egg

Filling:

100g Presta Pineapple

Method:

  • Mix all ingredients together using a whisk attachment
  • Mix for 1min at slow speed
  • Mix for 5mins at high speed
  • Scale the 500g batter in a 38 X 35 X 2cm tray
  • Bake at 200°C for 8-10mins in an electric deck oven or 180°C in a rotary oven
  • Demould the sponge sheets and layer it with Presta Pineapple
  • Roll the sheets and keep in the refrigerator for 15-20mins
  • Remove from the refrigerator and slice it evenly

Portions:

  • 4 log, that is 19 pcs for each log = 76 portions of swiss roll
