Melted Butter

Oil

Melted Dark Chocolate
Method
Mix all the ingredients together except melted dark chocolate using a paddle attachment
Mix for 1 minute at slow speed
Mix for 3 minutes at medium speed
Mix for 1 minute at slow speed by addition of melted chocolate
Scale 1500g batter in 40 x 20 x 5cm mould
Bake at 170°C for 30-40 minutes in a deck oven, or 160°C in a rotary oven
Portion
5 x 5cm per pcs = 24 portions of Crispy Top Brownie
